Cream of Asparagus Soup
Ingredients: 4 Cups of Asparagus – 2 Cups of water – 1/4 cup of chopped green onions – 2 Tbs of Butter
5 Tbs of Flour – 1/2 Tsp of Salt – 1/2 Tsp of Pepper – 4 Cups of Milk – 1 Tbs of Chicken Bouillon
DIRECTIONS: Place Asparagus in a large saucepan and cover with 1 cup of water. Bring to a boil, cover and cook for 3-5 mins or until crisp-tender. Drain, reserving water for broth.
In another saucepan, saute onions in butter until tender. Stir in flour an seasonings. Gradually stir in milk, chicken bouillon, reserved water an 1 cup of water Bring to a boil, cook and stir for 2 minutes or until it thickens and bubbly. Stir in Asparagus and heat throughly.
